Chocolate Making

The adventurous day comes to a close with the chocolate on your hands, and of course, your tastebuds!

Become a chocolatier with San Ignacio's very own "Cacao Man" at AJAW Chocolate & Crafts. Not only will you learn the history and culture behind the chocolate, you will also enjoy a hands-on experience.

AJAW is passionate about its Mayan roots, and wants to share its chocolate secrets with you. They promote the traditional way to making chocolate, which includes stone grinding of the cocoa seeds, turning it into a paste and serving it as a beverage – by far one of the most amazing flavors you will ever encounter! The traditional way of making chocolate is an art form, and AJAW is making sure it is not lost or forgotten.

Nearby-Favorite: The Raptor Centre

Another guest favorite is the nearby Raptor Center. As the only conservation center of its kind in Belize, here you will get to meet rescued birds and see how they are rehabilitated! Most birds at the Raptor Centre have been victims of poaching and abandonment. Not only does the Raptor Centre

rescue and care for these animals, they are also passionate about educating Belize and making sure these birds do not go from endangered to extinct. The birds that are unable to be released back into the wild become "Education Ambassadors". These birds are used in presentations, and even taken into local schools to educate the future of Belize.
